Ingredients

  • 1 1/2 cups almond flour

  • 1/4 cup organic butter, melted
  • 3/4 cup whipping cream
  • 4 ounces sugar-free dark chocolate chips (e.g., ChocZero or Lily’s)
  • 3 organic large egg whites at room temperature
  • 1/4 tsp cream of tartar
  • Pinch sea salt
  • 6 tablespoons powdered Swerve Sweetener
  • 1/2 teaspoon real vanilla extract

Instructions

  1. Preheat the oven to 325°F and line a 9x9 square baking pan with parchment paper, leaving extra paper on the sides for easy removal later.
  2. In a large bowl, combine almond flour, granulated sweetener, cinnamon, vanilla extract, and salt. Stir in melted butter until well combined.
  3. Press the dough evenly into the bottom of the prepared baking pan and bake for 12-15 minutes until the edges begin to brown. Remove and let cool.
  4. To make the filling, bring the whipping cream to a simmer in a medium saucepan. Remove from heat and mix in the chocolate chips. Let sit for 5 minutes, then whisk until smooth.
  5. Spread the chocolate cream over the cooled crust and refrigerate for about 1 hour or until firm.
  6. For the topping, preheat the oven to 300°F. Beat egg whites with cream of tartar and salt until frothy. Gradually add powdered sweetener and vanilla extract while continuing to beat until stiff peaks form.
  7. Spread the topping over the cooled filling and crust. Use a spoon to create peaks, then bake for 20 minutes or until the topping is golden and firm to the touch.
  8. Refrigerate for another hour to fully firm up. Lift out using the parchment paper edges and cut into 16 squares.
