Ingredients
  

Chicken
  • 4 boneless skinless chicken breasts (or thighs)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
Sauce
  • 3–4 minced cloves garlic
  • 1/2 chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan
  • 1/3 cup sun-dried tomatoes (in oil), drained and chopped
Finish
  • 2 cups baby spinach

Method
 

  1. Season chicken with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden; remove.
  3. Add garlic; sauté 30 seconds.
  4. Add broth and scrape the pan. Stir in heavy cream and parmesan; simmer 2–3 minutes.
  5. Add sun-dried tomatoes and spinach; cook until spinach wilts.
  6. Return chicken to pan; simmer 5 minutes or until cooked through (165°F).
  7. Serve hot. Optional garnish: basil and red pepper flakes.
