Method
- Season chicken with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden; remove.
- Add garlic; sauté 30 seconds.
- Add broth and scrape the pan. Stir in heavy cream and parmesan; simmer 2–3 minutes.
- Add sun-dried tomatoes and spinach; cook until spinach wilts.
- Return chicken to pan; simmer 5 minutes or until cooked through (165°F).
- Serve hot. Optional garnish: basil and red pepper flakes.
