Spinach & Feta Egg Muffins

Fluffy spinach & feta egg muffins that are meal-prep friendly, grab-and-go, and ultra satisfying. High protein, low net carbs, and perfect for steady energy all week.

Ingredients
  

  • 10 eggs
  • 2 cups spinach chopped
  • 1/2 cup feta crumbled
  • 2 tbsp olive oil (or avocado oil)
  • 1/2 cup onion diced
  • Sea salt
  • Garlic powder (optional)

Method
 

  1. Preheat oven to 350°F. Grease a 12-cup muffin tin.
  2. Sauté spinach 1–2 minutes; squeeze out excess liquid.
  3. Whisk eggs with salt/pepper (and garlic if using).
  4. Add spinach + feta to cups; pour egg mixture 1/2 full.
  5. Bake 18–22 minutes until set. Cool 5 minutes.
