Bread is the thing people miss most, and it is usually the thing that ends a keto run. These are not a perfect baguette, but they are a genuinely good dinner roll, and they take about fifteen minutes of work.

Melted mozzarella is the structure. Coconut flour and whey protein absorb the moisture, garlic powder and oregano do the flavoring, and baking powder gives enough lift to keep them from being dense pucks.

One roll is 4 g net carbs with 13 g of protein, which makes them substantial enough to sit beside a soup or a roast without feeling like a garnish.

Keto Zone Mozzarella Garlic Dinner Rolls

Ingredients
  

  • 1 cup organic mozzarella cheese grated
  • 3 free-range eggs
  • 2 tbsp grass-fed butter
  • 1/2 cup organic coconut flour
  • 1/4 cup grass-fed whey protein powder unflavored
  • 4 tsp baking powder
  • 2 tsp garlic powder
  • 1 tsp dried oregano
  • 1/4 tsp sea salt

Method
 

  1. Preheat the oven to 350 F and line a deep rectangular baking pan with parchment paper.
  2. Melt the butter in a non-stick saucepan over low heat.
  3. Add the grated mozzarella and stir until it melts into a smooth mass.
  4. Take the pan off the heat and add the eggs, coconut flour, whey protein, baking powder, garlic powder, oregano and salt.
  5. Stir with a spatula until a dough forms. Work quickly while the cheese is still warm and pliable.
  6. Divide the dough into 6 equal balls and arrange them in the pan in two rows of three.
  7. Bake for about 25 minutes, until the tops are golden brown.
  8. Let the rolls cool in the pan for 10 minutes before lifting them out, or they will tear.
