Cacao butter is what separates this from the usual almond flour chocolate cake. It sets firm as the cake cools and gives the crumb an actual structure, which is the thing most grain free cakes never manage.

There is no flour here at all. Psyllium husk does the binding, cacao butter and coconut oil carry the fat, and four eggs hold it together. Gluten free, dairy free and sugar free, without any of those being an apology.

Sixteen slices at roughly 1 g net carbs each. Note that the recipe as originally published listed cacao powder twice with contradicting amounts. We reconciled it to three quarters of a cup total, which is what the method actually calls for.

Ingredients
  

  • 1/4 cup organic coconut oil
  • 1/2 cup cacao butter
  • 3/4 cup cacao powder divided
  • 4 pasture-raised eggs
  • 3 tsp vanilla extract
  • 1/2 cup powdered keto sweetener
  • 2 tbsp psyllium husk powder
  • 1/2 tsp sea salt
  • 1 tsp baking soda
  • 1 tbsp organic apple cider vinegar
  • 1/2 cup water boiling

Method
 

  1. Preheat the oven to 350 F and grease a cake pan. Put a kettle of water on to boil.
  2. Melt the cacao butter and coconut oil together in a saucepan over low heat, stirring occasionally.
  3. Once fully liquid, stir in 1/2 cup of the cacao powder. Set the remaining 1/4 cup aside. Remove from the heat.
  4. In a large bowl, whisk the eggs and vanilla extract together.
  5. In a second bowl, combine the sweetener, the reserved cacao powder, the psyllium husk and the salt.
  6. In a small bowl, stir the baking soda into the apple cider vinegar and let it fizz.
  7. Pour the warm cacao and oil mixture into the eggs in a slow stream, whisking constantly so the eggs do not scramble.
  8. Whisk in the dry ingredients until smooth, then add the fizzing baking soda mixture.
  9. Pour in the boiling water last and whisk until the batter is completely smooth. It will look thin, which is correct.
  10. Pour into the prepared pan and bake for 30 minutes, until the center is firm and a toothpick comes out clean.
  11. Cool in the pan for 10 minutes before slicing.
