Fat bombs exist because the 3pm craving is real and a candy bar is not an option. These are walnuts, coconut butter and almond butter pulsed together, rolled, and kept in the fridge for exactly that moment.

One bomb is 2 g net carbs and about 16 g of fat, which is enough to stop hunger without turning into a meal. Chia and hemp seeds add fiber and a little protein, and the MCT Oil Powder is there for quick energy.

The whole batch takes fifteen minutes and makes sixteen. They keep in the fridge for a couple of weeks and freeze well.

Ingredients
  

  • 1 1/2 cups walnuts chopped
  • 1/2 cup shredded coconut unsweetened, for rolling
  • 1/4 cup coconut butter
  • 2 tbsp coconut oil
  • 1 scoop MCT Oil Powder
  • 2 tbsp almond butter
  • 2 tbsp chia seeds
  • 2 tbsp hemp seeds
  • 1 tsp cinnamon
  • 1/2 tsp vanilla bean powder
  • 1/4 tsp sea salt
  • 1 keto sweetener to taste, optional

Method
 

  1. Put the walnuts, coconut butter, coconut oil, MCT Oil Powder, almond butter, chia seeds, hemp seeds, cinnamon, vanilla bean powder and salt into a food processor. Hold back the shredded coconut.
  2. Pulse until the mixture comes together and holds when pressed. Do not run it to a smooth paste; a little texture is better.
  3. Taste and pulse in sweetener if you want it.
  4. If the mixture feels too soft to handle, refrigerate it for 10 minutes.
  5. Scoop out roughly one tablespoon at a time and roll into balls between your palms.
  6. Spread the shredded coconut on a plate and roll each ball through it to coat.
  7. Refrigerate for at least 30 minutes to firm up, then store in a sealed container in the fridge.
