Traditional goulash leans on potato and flour. This version swaps in celery root, which behaves almost identically in a broth: it softens without dissolving and gives the spoon something to find, at a fraction of the carbs.

Grass-fed beef and a long list of vegetables do the rest. Chili powder and oregano stand in for the paprika-heavy Hungarian original, and a splash of red wine vinegar at the end lifts the whole pot.

Note that the published nutrition for this one claimed 490 calories per serving. The entire pot is only about 1,250 calories, so a bowl is closer to 254. Nine g net carbs, 17 g protein, one pot, forty minutes.

Ingredients
  

  • 1 lb grass-fed ground beef
  • 2 cups crushed tomatoes
  • 3 cups filtered water divided
  • 1 organic onion chopped
  • 2 cloves garlic minced
  • 1/4 lb celery root peeled and chopped
  • 1 bell pepper chopped
  • 2 tbsp grass-fed butter divided
  • 1 tbsp chili powder
  • 1 tbsp dried oregano
  • 2 tsp sea salt
  • 1 tsp black pepper
  • 2 tsp red wine vinegar

Method
 

  1. Melt 1 tablespoon of the butter in a large pot over medium heat.
  2. Add the chopped onion and garlic and cook until soft and fragrant, about 3 minutes.
  3. Add the ground beef and cook, breaking it up, until browned through.
  4. Stir in the bell pepper, celery root, chili powder, oregano, salt and black pepper.
  5. Add the crushed tomatoes and 2 cups of the water. Stir to combine.
  6. Raise the heat until the pot comes to a simmer, then lower it, cover, and simmer for about 10 minutes.
  7. Check the celery root. It should be tender but still holding its shape.
  8. Stir in the remaining water, the red wine vinegar and the last tablespoon of butter.
  9. Simmer uncovered a few minutes more until it reaches the consistency you want, then serve.
