Cauliflower rice earns its reputation when it is treated like fried rice rather than a rice substitute. That means a hot pan, room to brown, and restraint with the stirring.

At 10 g net carbs a serving this is the highest carb recipe in the Keto Zone library, so it sits better as a side than as the whole plate. Most of that comes from the cauliflower itself and the carrot, and 4 g of fiber offsets part of it.

It also works as a base. Add chicken, beef or shrimp and it becomes a main course without changing anything about the method.

Keto Cauliflower Fried Rice

Ingredients
  

  • 1 head organic cauliflower medium, riced
  • 1 tbsp avocado oil
  • 3 pasture-raised eggs beaten
  • 1/2 organic onion finely diced
  • 1/4 cup carrots finely chopped
  • 2 cloves garlic minced
  • 5 green onions diced
  • 3 tbsp coconut aminos
  • 1/2 tsp sea salt or to taste
  • 1/4 tsp black pepper or to taste

Method
 

  1. Remove the core from the cauliflower and roughly chop it into florets.
  2. Pulse the florets in a food processor until they reach a rice-like texture. Stop before it turns to paste.
  3. Beat the eggs with a pinch of the salt and set aside.
  4. Heat the avocado oil in a large skillet over medium heat.
  5. Add the onion, carrot and garlic and saute for 3 to 4 minutes until softened.
  6. Turn the heat up to medium-high, then add the riced cauliflower and the coconut aminos.
  7. Spread it out and let it sit for a minute at a time between stirs, until it begins to brown at the edges.
  8. Push the cauliflower to one side, pour the beaten egg into the empty space and scramble it, then fold it through.
  9. Take the pan off the heat, stir in the green onions and season with the remaining salt and the pepper.
