Ceviche is what happens when acid does the work heat usually does. Lime juice firms the surface of the salmon and changes its texture within about half an hour, and the result is bright and clean in a way cooked salmon never is.

One thing to be clear about: the lime is not cooking the fish in any food-safety sense. Citrus does not kill parasites. Use salmon that is already safe to eat raw, meaning sushi-grade or commercially frozen, and keep it cold the whole time.

Ingredients
  

  • 6 oz wild-caught salmon sushi-grade or previously frozen, cut in 1/2 inch pieces
  • 1 organic avocado cut in 1/2 inch pieces
  • 5 tbsp lime juice fresh squeezed
  • 2 tbsp organic olive oil
  • 1 clove garlic minced
  • 2 tbsp cilantro chopped
  • 1 tsp sea salt

Method
 

  1. Confirm your salmon is sushi-grade or has been commercially frozen. Do not make this with fish that is not labeled safe to eat raw.
  2. Whisk the lime juice, olive oil and minced garlic together in a non-reactive bowl, glass or ceramic rather than metal.
  3. Cut the salmon into half inch pieces and add it to the marinade.
  4. Add the avocado, sea salt and chopped cilantro.
  5. Fold everything together gently so the avocado keeps its shape.
  6. Cover and refrigerate for 30 minutes. The salmon will turn opaque at the edges.
  7. Serve cold, straight from the fridge.
