This is the appetizer to bring when you do not want to spend the whole party negotiating with a cracker tray. Cucumber does the job bread usually does, and at 2 g net carbs for three of them you can eat freely.

The filling is cream cheese and butter beaten together with garlic powder, which sounds plain and is not. Butter is what keeps the mixture pipeable straight out of the fridge instead of stiffening into a brick.

Fifteen minutes, no cooking, and they hold on a platter for a couple of hours if you salt the cucumber first.

Keto Zone Cucumber Bites

Ingredients
  

  • 1 organic cucumber large
  • 1/2 cup organic cream cheese softened
  • 2 tbsp grass-fed butter softened
  • 1 tbsp fresh chives chopped
  • 1 tbsp fresh dill chopped
  • 1/4 cup cherry tomatoes quartered
  • 1/2 tsp organic garlic powder
  • 1/4 tsp sea salt

Method
 

  1. Slice the cucumber into rounds about 1/4 inch thick.
  2. Lay the rounds on paper towel, sprinkle lightly with a little of the salt and let them drain for 10 minutes. Pat dry.
  3. Beat the cream cheese, butter, garlic powder and remaining salt together until smooth and fully combined.
  4. Arrange the dried cucumber rounds on a serving platter.
  5. Spoon or pipe the cream cheese mixture onto each round.
  6. Scatter the chopped chives and dill over the top.
  7. Finish each bite with a quarter of a cherry tomato and serve.
