The published nutrition on this recipe was badly off, listing 403 calories and 11 g net carbs per cookie. That would put the batch above 8,000 calories, which the ingredient list cannot support. Recomputed, a cookie is about 175 calories at 2 g net carbs.

We also raised the sweetener from one teaspoon to a quarter cup. One teaspoon across twenty cookies is not detectable, and unsweetened almond butter with cacao needs more than that.

Keto Zone No Bake Chocolate Almond Cookies

Ingredients
  

  • 1 1/3 cups creamy almond butter
  • 2 cups unsweetened coconut flakes or gluten-free rolled oats
  • 1 scoop Keto Zone Shake Rich Chocolate
  • 2 tbsp grass-fed butter melted
  • 1/4 cup powdered keto sweetener or to taste
  • 2 tsp vanilla extract

Method
 

  1. Line a large baking sheet with parchment paper.
  2. Combine the almond butter, melted butter, vanilla, sweetener, shake powder and coconut flakes in a large bowl.
  3. Stir until the mixture is dense, sticky and uniform, with no dry pockets of coconut.
  4. Taste and add more sweetener if you want it sweeter. This is easier now than later.
  5. Scoop the mixture onto the parchment and press each scoop into a round about 3 inches across.
  6. Freeze for 30 minutes to set.
  7. Store in a sealed container in the freezer.
