Most chocolate pudding is cornstarch and cane sugar wearing a dessert costume. This one gets its body from chia seeds, which thicken on their own as they sit, so nothing has to be cooked or thickened with starch.

The original version of this recipe called for two cans of coconut milk split across two servings, which works out to well over 800 calories each. We rebalanced it to one can across four servings. That lands at 423 calories and 6 g net carbs, with 13 g of fiber doing most of the carb math for you.

Make it the night before. Chia needs at least two hours to hydrate fully, and it is noticeably better in the morning than it is after a rushed thirty minutes.

Probiotic Keto Chocolate Chia Pudding

Ingredients
  

  • 1/2 cup chia seeds
  • 1 can full-fat coconut milk 13.5 oz
  • 2 tbsp organic cacao powder
  • 2 scoop MCT Oil Powder vanilla flavor
  • 1 tbsp powdered keto sweetener
  • 2 tbsp sprouted almonds roughly chopped
  • 2 tbsp cacao nibs
  • 1 pinch sea salt

Method
 

  1. Whisk the coconut milk, cacao powder, sweetener and sea salt together in a medium bowl until no lumps of cocoa remain.
  2. Whisk in the MCT Oil Powder until fully dissolved.
  3. Add the chia seeds and stir well, scraping the bottom of the bowl so none settle in a clump.
  4. Let the mixture stand for 10 minutes, then stir thoroughly a second time. This is the step that keeps the pudding even.
  5. Divide between four jars or small bowls and cover.
  6. Refrigerate for at least 2 hours, or overnight for the best texture.
  7. Top each serving with the chopped almonds and cacao nibs just before eating so they stay crunchy.
