Chili is one of the easiest dinners to keep keto, as long as you drop the beans. A cup of kidney beans carries roughly 30 g of net carbs, which is most of a day allowance in a single bowl.

Take them out and you lose nothing that matters. The body of a good chili comes from the meat and the tomato, not the legume. This version goes a step further and uses cubed grass-fed steak instead of ground beef, which over six hours in the slow cooker breaks down into something closer to a braise than a chili.

Prep is about fifteen minutes, most of it cutting the steak. Everything else goes in the pot at once. Six servings, roughly 6 g net carbs and 48 g of protein each, and it freezes for three months, which makes it worth doubling.

Ingredients
  

  • 2 1/2 lbs grass-fed steak cut into 1 inch cubes
  • 1 tbsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp sea salt
  • 1/4 tsp ground cayenne pepper
  • 1 tsp black pepper ground
  • 1/2 cup leeks sliced
  • 2 cups canned tomatoes whole, with juice
  • 1 cup beef or chicken stock

Equipment

  • 6 quart slow cooker
  • Cutting board
  • Chef knife

Method
 

  1. Cut the steak into 1 inch cubes and add to the slow cooker.
  2. Add the chili powder, cumin, sea salt, cayenne and black pepper. Toss to coat the meat evenly.
  3. Add the sliced leeks, canned tomatoes with their juice, and the stock.
  4. Stir, cover, and set the slow cooker to high.
  5. Cook 6 hours, until the steak shreds easily under a fork.
  6. Use a fork to shred some of the steak cubes and break up any tomatoes still intact. Stir to combine.
  7. Taste and adjust the salt. Serve hot with your choice of toppings: grass-fed shredded cheese, sour cream, sliced avocado, chopped cilantro or sliced green onion.

Notes

Chuck roast is the better cut here and usually the cheaper one. It has the connective tissue that breaks down over six hours into the texture you want. Lean cuts like sirloin can turn stringy.
On low instead of high, run it 8 to 9 hours. Same result, better suited to a workday.
Toppings are not included in the nutrition below. A quarter avocado adds about 60 calories and 1 g net carbs. Two tablespoons of shredded cheddar add about 55 calories and under 1 g net carbs.
Freezes well for up to 3 months. Cool completely before portioning.
