Method
- Preheat oven to 350°F. Grease a 12-cup muffin tin.
- Sauté spinach 1–2 minutes; squeeze out excess liquid.
- Whisk eggs with salt/pepper (and garlic if using).
- Add spinach + feta to cups; pour egg mixture 1/2 full.
- Bake 18–22 minutes until set. Cool 5 minutes.
