Keto Zone Salmon With Guacamole Topping

Salmon is the perfect Keto Zone food: a cold water fish loaded with omega-3 fats and bioavailable protein, naturally low-carb. This version is baked simply and finished with a fresh keto guacamole topping.

Ingredients
  

Salmon
  • 4 fillets wild-caught salmon skin-on
  • 1 tsp sea salt
  • 1/2 tsp organic black pepper ground
  • 2 tbsp organic olive oil
Guacamole
  • 2 organic avocados ripe
  • 1/2 organic red onion chopped
  • 1 organic lime juiced
  • 1 tbsp organic olive oil
  • 1 tsp sea salt
  • 1/2 tsp organic black pepper ground

Method
 

  1. Preheat oven to 425°F.
  2. Rub salmon with olive oil liberally on both sides.
  3. Season salmon with salt and pepper.
  4. Line a baking sheet with parchment paper.
  5. Place salmon, skin-side-down, on the baking tray.
  6. Put tray in the oven and bake for 15 minutes.
  7. As salmon is baking, combine guacamole ingredients in a large bowl.
  8. Mash together guacamole ingredients until it reaches desired consistency.
  9. Once salmon is finished cooking, remove from oven.
  10. Distribute salmon fillets on 4 plates and top with guacamole.
  11. Serve and enjoy!
