Easy Crispy Keto Chicken Tenders

Oven-baked, family-friendly chicken tenders coated in coconut flakes and chopped almonds instead of wheat flour. All the crunch of fried tenders without the oxidized oils or the carbs.

Ingredients
  

  • 1 1/2 lb organic boneless skinless chicken thighs
  • 2 organic/free-range eggs beaten
  • 1/4 cup organic coconut flour
  • 1/4 cup organic coconut flakes
  • 1/4 cup organic almonds finely chopped
  • 2 tsp organic olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp organic black pepper
  • 1/4 tsp organic garlic powder
  • 1/8 tsp organic onion powder

Method
 

  1. Preheat the oven to 400°F.
  2. Finely chop almonds.
  3. In a small bowl beat eggs until yolks and whites are well combined.
  4. In a large mixing bowl, combine almonds, coconut flakes, coconut flour, garlic powder, onion powder, sea salt, and black pepper.
  5. Place a wire rack on a baking tray and oil wire rack with olive oil.
  6. Lay chicken thighs out on a cutting board and cut into 8 strips.
  7. Dip each chicken strip in the beaten eggs and then cover in the spice and flour mixture.
  8. Lay chicken strips out on the wire rack.
  9. Bake for 20 minutes or until golden brown and crispy.
  10. Remove chicken strips from oven and allow to cool for 5 minutes.
  11. Serve and enjoy!
