Meatloaf normally depends on breadcrumbs, which is exactly the wrong ingredient here. Psyllium husk does the same job: it absorbs moisture, holds the loaf together, and adds fiber rather than starch.

A note on the original version of this recipe. It called for unflavored Fiber Zone, and there is no unflavored Fiber Zone, only Berry and Lemon-Lime, neither of which belongs in a savory meatloaf. Its own introduction described psyllium husk as the binder, so that is what we specify. We also cut the amount from half a cup to three tablespoons, because psyllium is far more absorbent than flour and half a cup would turn the loaf rubbery.

Ingredients
  

  • 2 lb organic ground turkey
  • 3 tbsp psyllium husk powder
  • 1/2 cup organic tomato paste
  • 2 organic eggs large
  • 1/2 yellow onion diced
  • 8 cloves garlic minced
  • 1/2 bunch fresh parsley chopped
  • 2 tbsp coconut aminos
  • 1 tbsp paprika
  • 2 tsp sea salt
  • 1 tsp black pepper

Method
 

  1. Preheat the oven to 350 F.
  2. Grease a loaf pan with melted ghee or olive oil.
  3. Put the ground turkey, psyllium husk, tomato paste, eggs, onion, garlic, parsley, coconut aminos, paprika, salt and pepper in a large bowl.
  4. Mix with your hands until evenly combined, but stop as soon as it comes together. Overworking ground turkey makes it dense.
  5. Press the mixture into the loaf pan and smooth the top.
  6. Bake for about 1 hour, until the center reaches 165 F on a thermometer.
  7. Take it out and let the loaf rest in the pan for 10 minutes. It needs this time to set.
  8. Turn out of the pan, slice into 12 and serve.
