Most grain free tortillas crack the moment you fold them. The fix is psyllium husk plus genuinely boiling water, which together form a gel that behaves a little like gluten and lets the dough stretch instead of shatter.

Egg whites rather than whole eggs keep them pale and flexible rather than eggy. Almond flour carries the structure. Eight tortillas at 2 g net carbs each, with 7 g of fiber.

They keep in a sealed container in the fridge for about a week, which makes them worth making in a batch rather than to order.

Ingredients
  

  • 1 cup blanched almond flour
  • 6 tbsp psyllium husk powder
  • 4 egg whites pasture-raised
  • 1/2 cup filtered water boiling
  • 2 tbsp coconut oil for the pan
  • 1 tsp baking powder
  • 1 1/2 tsp sea salt

Method
 

  1. Whisk the almond flour, psyllium husk powder, baking powder and salt together in a large bowl.
  2. Whisk in the egg whites until the mixture looks like coarse crumbs.
  3. Bring the water to a full boil, then pour it in slowly while whisking until a dough forms.
  4. Let the dough rest for 5 minutes. It will firm up noticeably as the psyllium hydrates.
  5. Divide the dough into 8 equal balls.
  6. Place one ball between two sheets of parchment paper and press or roll it flat into a tortilla.
  7. Peel it off the parchment and set aside, then repeat with the rest.
  8. Melt the coconut oil in a large skillet over medium heat.
  9. Cook each tortilla for 30 to 40 seconds per side, until it firms up and picks up a little color.
  10. Cool on a plate. Store in an airtight container in the fridge for up to a week.
