Sliced cabbage is a better noodle substitute than it has any right to be. Cut into ribbons and dropped in at the end, it holds a soft chew that reads as noodle in a broth, without the starch.

The rest is a fairly classic chicken soup: thighs rather than breast because they stay tender through a simmer, half a cup of butter for body, and eight cups of bone broth carrying it.

Note that the published nutrition claimed 510 calories a serving. The entire pot comes to about 2,500 calories, so a bowl is closer to 320, with 29 g of protein and 6 g net carbs.

Keto Chicken Noodle-less Soup

Ingredients
  

  • 2 lb organic chicken thighs cooked and shredded
  • 8 cups chicken bone broth
  • 1/2 cup grass-fed butter
  • 2 cups green cabbage sliced into ribbons
  • 2 stalks organic celery chopped
  • 2 organic carrots chopped
  • 1 cup mushrooms sliced
  • 2 cloves garlic minced
  • 1/2 bunch fresh parsley chopped
  • 2 tbsp onion powder
  • 2 tsp sea salt
  • 1/4 tsp black pepper

Method
 

  1. Melt the butter in a large pot over medium heat.
  2. Add the celery, carrot, mushrooms and garlic and cook for 3 to 4 minutes, until fragrant and starting to soften.
  3. Pour in the bone broth and add the parsley, onion powder, salt and pepper.
  4. Bring to a simmer, then lower the heat to medium-low.
  5. Simmer for 10 to 15 minutes, until the carrots and celery are tender.
  6. Add the shredded chicken and the sliced cabbage.
  7. Cook for about 10 minutes more, until the cabbage is tender but still has some bite. Do not let it go soft.
  8. Taste for salt and serve hot.
