Broccolini is not baby broccoli, despite the nickname. It is a cross between broccoli and gai lan, and it has thinner stalks that cook through in the time it takes the florets to char, which is exactly why it roasts better than broccoli does.

Five ingredients and twenty minutes. It goes with fish, chicken or steak and asks nothing of you while it cooks.

One correction worth noting: the published calorie count of 195 was roughly double. Three quarters of a pound of broccolini and two tablespoons of oil across four servings comes to about 91 calories.

Ingredients

  • 3/4 lb organic broccolini
  • 2 tbsp organic olive oil or avocado oil
  • 2 tbsp lemon juice freshly squeezed
  • 1/2 tsp sea salt
  • 1/8 tsp black pepper

Method

  1. Preheat the oven to 400 F.
  2. Trim the dry ends off the broccolini stalks.
  3. Whisk the olive oil, lemon juice, salt and pepper together in a large bowl.
  4. Add the broccolini and toss until every stalk is coated.
  5. Line a large baking tray with parchment paper.
  6. Spread the broccolini in a single layer with space between the stalks. Do not crowd the tray.
  7. Bake for about 15 minutes, until the stalks are tender and the tips are charred and crisp.
  8. Serve hot.
