Keto Zone Chicken Asparagus Stir-Fry

A well-rounded keto meal built on chicken thighs, asparagus, garlic, ginger and lemon. Flavorful yet mild enough for the whole family, with 41 g of protein per serving.

Ingredients
  

  • 1 1/2 lb organic skinless/boneless chicken thighs
  • 1 tbsp grass-fed ghee
  • 1 bunch organic asparagus chopped
  • 6 cloves garlic chopped
  • 1 tbsp fresh ginger grated
  • 2 medium lemons juiced
  • 1 tsp organic coconut aminos
  • 1/2 tsp sea salt
  • 1/4 tsp organic black pepper

Method
 

  1. Preheat oven to 375°F.
  2. Arrange chicken thighs on a baking tray.
  3. When oven is preheated, place chicken in oven.
  4. Cook chicken for about 25 minutes.
  5. While chicken is cooking, cut off the ends of the asparagus and cut into bite-sized pieces.
  6. Chop cloves of garlic, set aside.
  7. Grate ginger, set aside.
  8. Juice lemons, set aside.
  9. Once chicken is cooked, remove from oven.
  10. Cut chicken into bite sized pieces.
  11. In a medium mixing bowl, combine chicken with garlic, ginger, and coconut aminos.
  12. Melt ghee in a large skillet over medium-high heat.
  13. Place asparagus into skillet and cook for about 2 minutes.
  14. Add in chicken mixture and continue to cook for about 3 more minutes, until chicken begins to turn golden brown.
  15. Remove from heat.
  16. Season with salt, pepper, and lemon juice.
  17. Serve and enjoy!
