Berries are the fruit that survives a ketogenic diet, and blueberries sit near the top of that short list. A half cup carries roughly 9 g of net carbs, which is workable when the fruit is doing the flavoring rather than the bulk of the dish.

This mousse leans on exactly that. The body comes from cream and the set comes from chilling, not from flour, a baked crust or a pile of filler. Eight servings land at 4 g net carbs and 260 calories each, which is unusual for something that eats like a real dessert.

The one thing to plan around is time. Most of the four hours on the clock is refrigeration, and a mousse pulled early will be soft rather than set. Make it the morning of, or better, the night before.
