This is the dish that converts people who think they do not like cauliflower. An hour under cream cheese and cheddar turns the florets sweet and soft, and the turkey bacon runs salt through the whole thing.

We list it at six servings rather than the four the original called for. Four servings of a whole head of cauliflower plus a cup of cream cheese and a cup of cheddar is an enormous plate; six is a side dish, which is what this actually is.

At 8 g net carbs it is one of the higher-carb items in the library, so it pairs best with a plain protein rather than another vegetable-heavy dish.

Ingredients
  

  • 1 head organic cauliflower cut into small florets
  • 1 organic onion small, chopped
  • 3 cloves garlic minced
  • 1 cup organic cream cheese softened
  • 1 cup cheddar cheese shredded, divided
  • 4 slices turkey bacon chopped
  • 1/4 cup cherry tomatoes chopped
  • 1/2 cup fresh parsley finely chopped, divided

Method
 

  1. Preheat the oven to 350 F.
  2. Wash the cauliflower, pat it dry and cut it into small, evenly sized florets. Spread them in a casserole dish.
  3. In a large bowl, combine the cream cheese, 3/4 cup of the shredded cheddar, the garlic, onion, chopped turkey bacon, cherry tomatoes and 1/4 cup of the parsley.
  4. Spoon the mixture over the cauliflower.
  5. Fold gently until the florets are coated throughout, not just on top.
  6. Scatter the remaining 1/4 cup of cheddar over the surface.
  7. Bake for about 1 hour, until the top is golden brown and the cauliflower is tender when pierced.
  8. Finish with the remaining parsley and serve hot.
